Groom's Cake recipe

Ingredients:

9 cups of raisins, finely chopped.
6 cups of sultana raisins.
3 cups of dried currants.
1 ½ lb of chopped candied citron.
½ lb of candied lemon peel.
½ lb of chopped candied orange peel.
3 1/3 cups of all-purpose flour.
4 teaspoons of ground cinnamon.
4 teaspoons of ground allspice.
1 ½ teaspoons of ground mace.
2 teaspoons of ground nutmeg.
2 cups of butter.
2 ¼ cups of packed brown sugar.
12 medium eggs, separated.
1 cup of brandy.
1 oz (4 squares) of semisweet chocolate.
1 cup of molasses.
¼ teaspoon of baking soda.
1 cup of hot water.

Preparation Instructions:

In a large bowl, sift 3 cups of flour with spices. In another bowl, mix the raisins, sultana raisins, currants, citron, and citrus rinds; dredge with 1/3 cups of flour. Stir raisin mixture into the flour.

In a very large bowl, cream the butter or margarine. Beat in the sugar, a small amount at a time. Add the beaten egg yolks, flour mixture, brandy, chocolate and molasses. Beat the egg whites until stiff, and fold them into the batter. Dissolve the baking soda in the hot water and stir gently into batter. Grease and flour 5 bread pans, and pour batter into prepared pans.

Bake at 275°F (135°C) for 4 hours. Allow to cool. Cut into slices and wrap each slice.
